I love chicken because it is versatile, easy to cook and very affordable. But by itself, chicken can get pretty dull. I usually eat chicken with pasta, potatoes and/or vegetables, but I needed a new way to eat chicken because I was getting bored. I thought I would try placing it in a wrap, but just the usual salt and pepper would not give it a new taste.

Whenever I buy pasta, I usually gravitate towards the penne or the farfalle box because that is what I am used to eating. But those get old, and I wanted to try something new. I had never heard anything about orzo pasta before and thought I would give it a shot. I found it surprisingly creamy and instantly fell in love with it. Combining it with pesto and fresh tomatoes makes it a great light lunch or even a light side dish. I created this dish because I needed a refreshing salad that would help me maintain my New Year's resolution of eating more healthily. If you have never eaten orzo pasta before, try this dish - I promise you will love it. Guten Appetit!
For my last recipe of the semester, I wanted to show how to make a simple and easy dessert. With four ingredients, this is the simplest recipe yet. The idea came from a good friend of mine. I have since altered it by using a boxed brownie mix and adding walnuts and chocolate chips. Adding some marshmallow fluff also gives this old classic an improved texture.
We all have our staple dishes, and this meal is my all-time favorite. I love it because it contains my favorite foods: chicken, mushrooms, heavy cream and potatoes. I got the recipe idea from my mom. She doesn't make it often, and since it is a simple recipe, I have never asked her for it. It took me a few tries to get it completely right, having added oregano and thyme as key ingredients, but I think I found the perfect blend.

As I mentioned in the Sept. 20 issue, food is my passion. If I could, I would spend 24 hours a day in the kitchen, creating new dishes. However, there are some days when I am just too tired and want to eat the type of dinner that requires little cleanup and only a few ingredients. On those days, I fall back on comfort foods that are quick and easy, such as one of my all-time favorites: mac and cheese. Because I have never been a big fan of powdered cheese that looks like it may be radioactive, I have developed my own deliciously creamy version of mac and cheese.
