Dorm recipe: Outrageous orzo peppers anyone's palate

Whenever I buy pasta, I usually gravitate towards the penne or the farfalle box because that is what I am used to eating. But those get old, and I wanted to try something new. I had never heard anything about orzo pasta before and thought I would give it a shot. I found it surprisingly creamy and instantly fell in love with it. Combining it with pesto and fresh tomatoes makes it a great light lunch or even a light side dish. I created this dish because I needed a refreshing salad that would help me maintain my New Year's resolution of eating more healthily. If you have never eaten orzo pasta before, try this dish - I promise you will love it. Guten Appetit!

Ingredients

  • 1 1/2 cups orzo pasta

  • 2-3 tablespoons pesto sauce

  • 1/2 cup cocktail tomatoes


Cooking instructions

Bring a pot of water to a boil and add the orzo. Follow the cooking instructions on the box regarding cooking time.
When the pasta is done, drain well and let cool.
Halve the cocktail tomatoes with a sharp knife.
Once the pasta has cooled, add the pesto and the tomatoes.
Combine all ingredients so the pesto is evenly distributed.

Note that this dish can also be served hot.
